Kanzashi is a pure rice wine that appears clear, with a slight sheen. It has a mild smell that is derived from rice and a Maillard reaction between reducing sugars and amino acids. It is plump, rich, and deep in taste, but leaves a pleasant finish. It pairs well with well-seasoned or salty dishes.
